Herring Salad with Beets and Pickles

  • 1 725 gram/32 oz. jar of Feature Foods Herring in Wine Marinade, drained and onions removed
  • 2 medium potatoes
  • 2 medium green apples
  • 4 red beets, boiled
  • 3 green onions
  • 5 dill pickles
  • 1 ½ pt. low fat sour cream
  • ½ to 1 tsp. dried thyme
  • Salt and pepper to taste

Cube herring.  Combine with apples, potatoes, beets, pickles, and green onions.  Mix in sour cream and spices.  Cover and let stand in refrigerator for 1 day before serving
