Pink Herring Salad


Dressing:

  • 3 heaping tbsp. mayonnaise
  • 3 heaping tbsp. low fat sour cream
  • 2 tbsp. vinegar
  • 1 ½ tsp. Dijon
  • ¼ tsp. pepper
  • ¼ tsp. sugar
  • 1 tsp. garlic powder

Salad:

  • 1 320 gram/13 oz. jar of Feature Foods Herring in Wine Marinade, drained and onions removed
  • 4 c. chopped celery
  • 5 hardboiled eggs, cubed
  • 2 dill pickles, diced
  • 6 sm. – med. red potatoes, boiled and cubed
  • 1 16 oz. jar red beets, drained and diced, reserving liquid

Mix dressing ingredients well.  Gently combine salad ingredients.  Pour dressing over salad and mix to coat.  Add enough reserved liquid from beets to colour salad and reach desired consistency.  Chill 4 – 6 hours before serving.
